Have you ever noticed the ingredients on gummy fruit snacks? They are mostly high fructose corn syrup, artificial dyes and flavors, and gelatin. Gummy fruit snacks don't have to be just empty calories packed with harmful chemicals, these homemade elderberry gummies are healthy in that there is no junk in them but they are actually a healthy powerhouse!
Let's talk about gelatin for one second. Before I knew about Real Food the word gelatin only conjured the image of the jiggly Jell-O, then I discovered that the gelatin in those snacks are of very poor quality, a mystery of ground up animal parts, animals that most like have been treated with with hormones, antibiotic, and fed a GMO grain diet.
So what is gelatin?
According to Great Lakes (the brand I use and trust) gelatin is:
"...The purified protein derived by the selective hydrolysis of collagen from the skin, connective tissue and or bones of animals."
So it is very important to select a gelatin of high quality, one that comes from animals that were pastured raised, and not treated with hormones and antibiotics. The collagen in gelatin along with the many amino acids help regulate our metabolisms, have anti-inflammatory properties, strengthens hair and nails, regulates hormones, and so much more. I take two teaspoons daily, one in the morning in my coffee and one at night in my tulsi tea. (You can read here more in detail about the wonders of gelatin.)
What are elderberries?
These tiny little berries are found in temperate to subtropical parts of the world, and highly regarded in the natural medicine world for their high content of vitamin C along with being high in anti-oxidants and anti-inflammatory. Elderberyy juice was even used in Panama in 1995 to help fight the flu pandemic they suffered. You can take 1-2 teaspoons during cold season, or in our case to mix it with our Fermented Cod Liver Oil (find it here).
So when super gelatin and super elderberry team up--along with their sidekick raw honey--what do we get? A super snack capable of fighting colds and flu and making your cellulite disappear! I'm...not..kidding!
Homemade Elderberry Gummies: Vitamin C Treats
- 1/3 cup unsweetened elderberry juice (find dry elderberries here and see recipe elderberry syrup below)
- 2 tbs orange juice
- 3 tbs raw honey (find it here)
- 3 tbs grass-fed gelatin (like this one)
Add ingredients into a small sauce pan, whit a whisk combine them until no lumps are visible and mixture seems even. Turn stove to the lowest setting and keep whisking until mixture is completely melted and warm to the touch. Do not let mixture get too hot to conserve all the properties in the honey.
Transfer to a pan or candy mold such as this or this one. Pop in the freezer for about 10 minutes. Gummies will remain solid even at room temperature. Enjoy
Simple Elderberry Syrup
In a small sauce pan combine all ingredients and bring to a boil over medium heat for about 20 minutes or until it is reduced to about half. Set aside and let it cool off and add the honey while it still warm enough to dissolve the honey but not too hot that it will damage its properties. Store in a glass jar in the fridge, it will keep for a few week.
