One of my favourite memories from when I was a child was having French toast. We didn’t get it very often, but let’s face it; any dessert with icing sugar on top is one you’re going to remember!
I’ll admit though when it comes to breakfast I can be a little lazy. I make a mean Whole Wheat Cheese Waffle, which is simply delicious, but I’m not making it every morning. (I usually make a triple batch and freeze them, they are better than eggs that’s for sure!)
I haven’t made French toast in ages and the other day I had a hankering for it, but like I said I’m kind of lazy. That’s when I whipped up this wonderful little dish, which my mother says is actually better than original French toast! I have to agree and it’s good cold too!
Ingredients (makes about 6 pieces)
- ¼ cup butter
- ½ cup maple syrup
- 6 slices of bread
- 5 eggs
- 1 ½ tsp. cinnamon
- 1 ½ tsp. nutmeg
- Icing sugar (optional)
Melt butter and mix with maples syrup. Pour into the bottom of a 9×13 pan. (Like the one here) Layer bread slices over top of butter mixture. Mix eggs, cinnamon and nutmeg together. Pour over top of bread making sure to cover all of the bread.
Bake in a 350F oven for 20-30 mins depending on a thickness of bread. Cut and sprinkle with icing sugar if desired.
